Ingredients:
4 cups of water
2 cups of chicken or vegetable broth
2 cloves of garlic, minced
1-inch piece of ginger, peeled and grated
1 tablespoon soy sauce
1 tablespoon mirin
1 tablespoon sesame oil
2 packs of ramen noodles
1 cup of chopped vegetables (such as bok choy, mushrooms, and green onions)
2 boiled eggs, sliced
Nori sheets, sliced
Sriracha sauce (optional)
Instructions:
In a large pot, bring the water and broth to a boil over medium heat. Add the garlic, ginger, soy sauce, mirin, and sesame oil. Stir to combine.
Add the vegetables to the pot and let them cook for a few minutes until they start to soften.
In a separate pot, cook the ramen noodles according to the package instructions. Drain and set aside.
Once the vegetables are cooked, add the cooked noodles to the pot and stir everything together.
Divide the noodles and broth between 2 large bowls. Top each bowl with sliced boiled eggs and nori sheets.
Add sriracha sauce if desired, and serve hot.
