Pani puri, also known as golgappa, is a popular street food in India. Ingredients:

  • For the puris:
    • 1 cup semolina
    • 1/4 cup all-purpose flour
    • 1/4 tsp baking soda
    • Salt to taste

    • 1 cup boiled and mashed potatoes
    • 1/2 cup boiled chickpeas
    • 1/4 cup chopped onions
    • 2 tbsp chopped coriander leaves
    • 1 tsp chaat masala
    • Salt to taste
  • For the pani:
    • 1 cup chopped mint leaves
    • 1/2 cup chopped coriander leaves
    • 1/2 inch piece of ginger
    • 2 green chillies
    • 1 tsp cumin powder
    • 1 tsp chaat masala
    • 1 tsp black salt
    • 2 tbsp tamarind pulp
    • 1 tbsp lemon juice
    • 4 cups chilled water

Method:

  1. To make the puris, mix the semolina, all-purpose flour, baking soda, and salt in a bowl. Add water and knead into a stiff dough.
  2. Divide the dough into small portions and roll each portion into a small circle. Cut out small circles using a cookie cutter or a bottle cap.
  3. Heat oil in a deep frying pan and fry the puris until they are crispy and golden brown.
  4. To make the filling, mix the mashed potatoes, boiled chickpeas, onions, coriander leaves, chaat masala, and salt in a bowl.
  5. To make the pani, grind the mint leaves, coriander leaves, ginger, and green chillies into a fine paste. Add cumin powder, chaat masala, black salt, tamarind pulp, lemon juice, and chilled water. Mix well.
  6. To serve, take a puri and make a small hole in the center. Fill it with the potato mixture and dip it into the pani. Eat the puri in one bite and enjoy the burst of flavors in your mouth.
